Chicken curry with coconut milk

Hello hello,

Ohhh my famous chicken curry !!!! This dish has been my sure bet for years. Not only will you find the recipe below but I am going to make you a confession: this dish has been the center of so many dinners with friends, that it literally has heard all of everyone’s gossip 🙂

On that note, here we go … It’s very easy.

To make this recipe for 4 people, you need:

  • Chicken Breasts ( 500 gr )
  • 1 Onion
  • 1 Red pepper
  • 1 Carrot
  • 1 Zucchini
  • 1 Cauliflower or Broccoli
  • Cashew nuts (1 handful)
  • Brown sugar (1 tablespoon)
  • Curry powder (2 tablespoons)
  • Coconut cream or milk (400 ml)
  • Salt
  • Pepper
  • Olive oil


Firstly, cut all the vegetables (pepper, onion, zucchini, carrot, cauliflower).

Then put them in a pot with SALT + PEPPER + OLIVE OIL and cover.

Cook for 10/15 minutes


While the vegetables are cooking, dice up the chicken cutlets.

Add them to the cooked vegetables with the first spoon of CURRY + CASHEW NUTS + SALT + PEPPER + OLIVE OIL

Cover and cook for 10/15 minutes, stirring frequently.


Once the chicken is cooked, add the coconut milk + one spoon of SUGAR + the second spoon of CURRY

Let it cook for few minutes over low heat and it’s ready.
