A dish made almost exclusively with vegetables….Is this not a dream ?
It’s as beautiful for the eyes as it is good for the palate ( and healthy too! ).
For your information, the word ” Zoodles” is a contraction of the words : ZUCCHINI and NOODLES.
So these are zucchini pasta or zucchini noodles, as you like.
Here is the list of ingredients you need to make this recipe :
- 2 large zucchinis
- 3 generous spoonfuls of goat cheese spread
- 1 onion
- 1/2 avocado
- Lemon peel ( 1 teaspoon )
- Around twenty cherry tomatoes ( a mixture of red and yellow ones )
- Pine nuts
- Fresh parsley ( 1 handful )
- Fresh basil ( 1 handful )
- Olive oil ( 4 tablespoons )
- Basilic vinegar ( 1 tablespoon )
- Pepper
- Salt
You’ll need a julienne knife, as shown on the picture below, and an electric chopper too.
So let’s get started, we cut / grate our zucchini with the julienne knife in order to get our zucchini pasta.
Stop when you reach the beginning of the soft part inside the vegetable ( it’s too wet for our noodles ).
Put it aside.
Fill the chopper with parsley, basil, goat cheese, a handful of pine nuts, lemon peel, olive oil, salt and pepper.
And then : CHOP !!!!
Pause to add the avocado. And once again, chop until we get a consistent green paste.
Here it is, our beautiful avocado pesto is now ready. Put it in the fridge while we prepare the rest.
Cook the chopped onions on the stove for a few minutes with salt, pepper and a drizzle of olive oil.
Then add the cut tomatoes with salt, pepper and a little bit of olive oil.
Remove the mixture after no more than 5 minutes to avoid overcooking.
It’s now “cooking time” for our zoodles !!!….. yummy….. Exciting 🙂
We combine our Zucchini pasta, our spoonful of balsamic vinegar, 2 generous spoonfuls of our favorite pesto and the onion/tomato mixture in a pan and cook briefly before removing (increase the amount of pesto until you find the taste at its best).
Remove the zoodle mixture from the stove. Serve with a few pine nuts on top.
And voila! Now all you have to do is enjoy!

Extras :
* If you like garlic, add some during the preparation of the pesto.
* Parmesan grated over our dish is also a great addition.
