A carpaccio of zucchini? Here’s a fun idea, easy to make, that is vegetarian and gluten-free!
To make this carpaccio, you need:
- A zucchini (for 3 small plates)
- Pine nuts
- Lemon juice
- Olive oil
- Fresh basil leaves
Start by frying the pine nuts in a frying pan for about 10 minutes.
Then cut the zucchini into thin slices manually or with the aid of a mandolin.
The finer the slices, the more the carpaccio effect will be successful.
Place the slices on the plate in stair form.
Once the plate filled, add a drizzle of olive oil and a few drops of lemon juice.
Garnish the preparation with the fresh basil leaves, the cooked pine nuts and sprinkle with parmesan.
